- 2 kgs de champiñones enteros

- 3 litros caldo de carne(hacendado)
- 2 paquetes frutos secos naturales (omega 3) 100 gr(Hacendado)
- 1 ñora
- 1 pimiento amarillo
- 1 pimiento rojo
- 1 pimiento verde
- 4 tomates maduros
- Aceite de oliva 1 vaso de café
- 6 dientes ajo

- Preparamos en un bol las especias con las que embadurnaremos la pierna de cordero:2 cucharadas soperas de sal, 1 pizca de pimienta, 1 pizca de canela, 1 pizca de orégano, 1pizca de tomillo, 1 pizca de perejil picado,
- Rebozamos la pierna de cordero, previamente le hacemos unos cortes en la pierna para que se haga bien, con las especias, y dejamos reposar 10 minutos, seguidamente embadurnamos la pierna con harina, y volvemos a dejar reposar 10 minutos más
- En una sartén grande, añadimos aceite a fuego medio, cuando empiece a humear, echamos con cuidado la pierna de cordero y dejamos que vaya dorandose durante 20 minutos por la dos partes
- Una vez ya dorada la pierna, retirar y en el mismo aceite, poner a pochar, las cebollas, pimientos, zanahorias, tomates y ajos, todo limpio y troceado
- Una vez todo pochado, triturar sin el aceite,
- En el aceite restante(si no ha quedado aceite, añadir), sofreír los champiñones (troceados y limpios), una vez hechos los champiñones retirar
- Añadimos en el aceite restante, la verdura triturada, el caldo de carne, la ñora, las hojas de laurel u los frutos secos, echamos la pierna de cordero con mucho cuidado y mantener a fuego medio, echamos también los champiñones por encima
- Cuando veamos que la salsa ya queda homogénea (removemos sin parar) y vamos echando con un cucharón por encima de la pierna de cordero, más o menos a la hora, retirar del fuego y dejar reposar 24 horas
- Al día siguiente, horas antes de servirla, poner en horno a 90 grados(no más) durante 3 horas. De esta manera quedará mucho más tierna la carne y lista para servir, recomiendo tapar la bandeja con papel de aluminio para que no se seque
