- Truco 2, calentamos un poco la leche para no romper la cadena de calor a la mantequilla/harina y utilizamos unas varillas para evitar que se hagan grumos en la mezcla.

- Truco 3, sin dejar de remover, vamos agregando poco a poco la leche. Cuando la mezcla haya absorbido la leche agregamos un poco más dw leche, sin dejar de remover. Hasta obtener la textura deseada. Ni muy espesa, ni muy líquida porque el pastel va al horno y no queremos que quede seco.

- Agregamos la Nuez Moscada, la sal y reservamos.

- Precalentamos el horno calor arriba y abajo a 180°
- En una fuente para horno untamos aceite de oliva e incluimos una capa de puré de boniato.


- Ponemos encima la carne.

- Continuamos con una capa de bechamel.

- Repetimos las capas en el mismo orden y finalizamos con queso para gratinar.

- Meter al horno calor abajo por 30 min, pasado este tiempo cambiar a calor arriba por 5 min.
