- 1 litro leche

- 200 grms Queso parmesano

- Primero preparar la salsa bechamel con manteca a fuego medio en una cacerola hasta disolver. Agregar la harina y pimienta. Mezclar con una cuchara de madera hasta que los ingredientes se integren. De a poco leche fría y mezclar a fuego bajo, agregar nuez moscada. Revolviendo de vez en cuando hasta espesar. Retirar del fuego y reservar.



- Salsa bolognese... en una sartén con aceite de oliva, cocinar cebollas, apio, zanahoria cortadas en brusnois.



- Cuando estén dorados, poner la carne, cocinar hasta el punto que se toma color gris. Agregar vino blanco, bajar el fuego medio. Cuando el vino se haya evaporado, agregar leche. Cuando se haya evaporado agregar salsa de tomate junto con el caldo.



- Bajar el fuego mínimo, cocinar 2 hs. Si se seca mucho, agregar más caldo. A lo último azafrán.



- Cocinado de láminas: poner en una cacerola agua con sal y un chorro de aceite (para evitar que se peguen). Cuando rompe el hervor, agregar las láminas dte 4'. Retirar de a una, tener un bols con agua fría(para cortar la cocción), e ir sacando y acomodando sobre una pyrex o fuente aceitada para horno.



- Intercalar capas de masa, salsa bechamel, queso parmesano y salsa boloñesa. Repetir dos veces más. Terminar con la última porción de masa y cubrirla con salsa bechamel y parmesano por encima.


- Llevar la lasaña cubierta con papel de aluminio a un horno a 180 oC durante unos 20 minutos. Retirar el papel de aluminio y cocinar 10 minutos más para que gratine. Apagar el horno y dejar la lasaña adentro durante 15 minutos más para que se asiente antes de cortarla. Buen provecho Familia !!!♥️
